Step into pineapple paradise with the Blue Hawaii Mocktail! This alcohol-free version of the classic cocktail delivers all the island flavors without the rum, making it perfect for everyone to enjoy.

It’s sweet and tangy with a pineapple, lemon punch, balanced with simple syrup and citrusy blue curacao syrup. When you add the optional coconut cream, you get a luxurious silky texture and a hint of creamy coconut that takes me right into vacation mode.

Ingredients

  • Pineapple Juice: The foundation of our mocktail. Use 100% juice for best flavor. Fresh is wonderful but good quality canned is what I use.
  • Fresh Lemon Juice: Always use fresh for that bright, clean acidity. Bottled lemon juice won't give you the same vibrant flavor. You could sub lime juice if you prefer.
  • Simple Syrup: Balances the acidity. You can make your own by dissolving equal parts sugar and water. Another option instead of the lemon and simple syrup is to use the same amount of sour mix.
  • Blue CuraƧao Syrup: The non-alcoholic version gives us that stunning blue color and hint of orange flavor. Find it in the cocktail mixer section or online. You can also make a lemon-lime Blue Ocean Mocktail with it!
  • Coconut Cream: Optional but recommended for creaminess. Look for coconut cream or full fat coconut milk for the best texture.
  • Ice: I use nugget ice, but regular cubes work great, too!
  • Garnishes: Fresh pineapple and maraschino cherries add the perfect tropical touch.

Equipment

  • Cocktail Shaker or Mixing Glass: For combining ingredients. No need for actual shaking, just stirring so any glass will do.
  • Jigger or Measuring Spoons: For precise measurements. Though I won't fault you if you eyeball measurements!
  • Hurricane Glass or Tall Glass: Shows off the beautiful color.
  • Colorful Straws: Adds to the tropical presentation.
  • Large Pitcher: If you're prepping this for a party, see the specific notes for this below.

Instructions

Let's make some mocktails!

  1. Step 1: Combine the liquids: Mix pineapple juice, lemon juice, simple syrup, blue curaƧao syrup, and coconut cream in your shaker or glass.

  1. Step 3: Prepare your serving glass: Fill a hurricane or tall glass with ice cubes. Transfer your blue mixture over the ice. Garnish and serve!

For an extra special touch, freeze pineapple chunks to use in place of ice cubes, They'll keep drinks cold without diluting them as they melt.

Tips & Tricks

  • Create a gradient effect by pouring half the batch without coconut cream, then gently adding the coconut cream mixture on top for a stunning two-toned blue drink.
  • For kids, use fun shaped ice cubes or add a splash of lemon-lime soda for some fizz.
  • Pre-skewer garnishes ahead of time and keep them refrigerated for quick assembly.
  • Label your pitcher if serving multiple drink options at your gathering.

Preparing for a Party

For a batch that serves approximately 8 people, combine 4 cups (32 oz) pineapple juice, ½ cup (4 oz) fresh lemon juice, ½ cup (4 oz) simple syrup, 1 cup (8 oz) blue curaçao syrup, and ½ cup (4 oz) coconut cream (if using) in a large pitcher.

You can prepare this mixture up to 4 hours before your event and store it in the refrigerator. When guests arrive, simply pour the blue mixture over ice in individual glasses and add your garnishes.

To elevate your party presentation, consider setting up a DIY garnish station with pineapple wedges, cherries, colorful straws, and umbrella picks for guests to customize their drinks.

Substitutions

Looking to adapt this mocktail to fit dietary needs? Here are some easy substitutions:

  • Lower-Calorie Version: Use diet or light pineapple juice, which contains fewer calories and less sugar. Alternatively, dilute regular pineapple juice with a splash of water or unsweetened coconut water.
  • Sugar-Free Option: Substitute regular simple syrup with sugar-free simple syrup made with a monk fruit sweetener or stevia. Most brands of blue curaƧao syrup also offer sugar-free versions.
  • Dairy-Free: The recipe is naturally dairy-free, but ensure your coconut cream doesn't contain any dairy additives.
  • Color Alternatives: If you can't find blue curaƧao syrup, use a drop of blue food coloring with a splash of orange extract or orange-flavored water enhancer.
  • Pineapple Alternatives: If you're allergic to pineapple, try using white grape juice with a splash of lemon for a similar sweetness profile while maintaining the drink's color when mixed with blue curaƧao.
