Hamburger steaks in mushroom gravy are a delicious, budget-friendly dinner option perfect for busy nights! Ground beef keeps this meal affordable, while the savory mushroom gravy makes it special. With minimal prep, everything cooks on a single sheet pan, making cleanup a breeze.

We love steak at our house, but can’t afford to eat it frequently. That’s where this Salisbury Steak-inspired recipe saves the day. All the best comfort foods are smothered with gravy.
The best part about this recipe is that it’s pretty low effort. Cut up a few vegetables, sling ’em on a sheet pan with ground beef patties, roast them for 20 minutes. Then make a super creamy mushroom gravy in 2 minutes in the blender.
Ingredients Notes
Ground Beef – I use 80/20 grass-fed beef but leaner ground beef will work, too. You could also substitute ground turkey, ground chicken or ground pork.
Mushrooms – I love to use baby bella mushrooms in this recipe, but white button, brown mushrooms or even regular sized portobellos work, too.
Thyme – I snip a few sprigs of fresh thyme from the herb garden. After the sheet pan comes out of the oven, the thyme sprigs will get dry and brittle. You can easily run your fingers down the stem and the leaves will fall off onto the burgers and veggies to add a nice flavor. Then just throw the stems away.
Of course, if you don’t have fresh thyme, dried works great, too. You can also sub in Italian seasoning.
Liquid Aminos – If you’re unfamiliar with this one, it’s just like soy sauce but lower in sodium, totally gluten free and a source of essential and non-essential amino acids. It has a savory, umami-rich flavor that adds depth to the gravy without adding much salt or additional seasonings.
My Love for Bone Broth
I always have bone broth on hand. A year ago I started noticing that my body was much more sensitive to caffeine, so I looked for ways to pare down on my three cups of coffee in the morning. I read about the benefits of bone broth and the suggestion to use it as a gentler way to start the day. It was a little odd at first but now I look forward to it.
I like to use Bare Bones powdered bone broth and hydrate it with water. There are lots of bone broth options at most grocery stores these days or you can make your own. This adds extra depth and richness to the mushroom gravy.
That said, you can totally still make the gravy with regular beef stock or beef broth or even water.
How to Make Oven Hamburger Steaks with Mushroom Gravy
Step 1: Place patties, sliced onion, garlic, mushrooms and thyme on a baking sheet and drizzle with avocado oil and season with salt and pepper.
Step 2: Bake for 20 minutes at 425F then turn the oven to broil and cook for 2 more minutes to get a little extra browning on top of the meat and veggies.
Step 3: Move the meat and half of the onions and mushrooms to a serving platter, then add the remaining garlic, onions, mushrooms and accumulated juices to a blender.
Add beef bone broth and liquid aminos to the blender, too, and blend for a full minute until you get a silky smooth mushroom onion gravy.
Step 4: Spoon some of the gravy over the top of your steaks and serve the rest on the side.
Serving Suggestions
You can serve oven-baked hamburger steak with a fresh side salad or roasted veggies. My creamy mashed cauliflower is always hit. It’s also great with a side dish made of quinoa, barley or, my new obsession, fonio.
Tips for this Hamburger Steak Recipe
- Get pre-shaped hamburger patties to save time. I keep my patties round but some folks go more for an oval patty. Do you!
- Line the pan with aluminum foil or parchment paper for easier clean up of the pan.
- Keep the leftovers in an airtight container. I especially love to use the gravy the next day over eggs and sausage on a whole grain bread.

- 1 to 2 pounds ground beef, formed into patties *see notes
- 1 medium yellow onion, cut into thin rings
- 8 ounces of mushrooms, sliced (baby bella, white button and brown mushrooms all work great)
- 6 whole cloves of garlic
- 5 sprigs of fresh thyme or 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 Tbs avocado oil
- 1 Tbs liquid aminos (or coconut aminos or soy sauce)
- 1 cup beef bone broth or beef broth
Instructions
- Preheat the oven to 425F.

- Bake for 20 minutes at 425F then turn the oven to broil and cook for 2 more minutes to get a little extra browning on top of the meat and veggies.
- Move the meat and half of the onions and mushrooms to a serving platter, then add the remaining garlic, onions, mushrooms and accumulated juices to a blender. Add 1 cup of beef bone broth and 1 Tbs liquid aminos to the blender, too, and blend for a full minute until you get a silky smooth gravy. If you used leaner meat, you might have less juices accumulated in the pan. In which case, add 1/4 cup more broth to get a pourable gravy consistency.
- Spoon some of the gravy over the top of your steaks on the platter and serve with the remaining gravy on the side.
Notes
- The amount of ground beef you use will depend on how many serving you’d like to make and how big you want your steaks to be. I like to buy around 1.25 pounds (20oz) of ground beef to make four 6 ounce patties for my family.
- I buy ground beef that is an 80/20 mix of lean to fat. You could use leaner if you like.
