Crock Pot Jalapeño Popper Dip with Bacon

Crock Pot Jalapeno Popper Dip is an easy, cheesy party appetizer loaded with fresh jalapenos and topped with crispy bacon.

I'm not a sports fan, but I love a Super Bowl Party because of my undying devotion to appetizers and finger foods.  This cheesy dip has a subtle kick of heat for those who like it spicy.  

Assemble it ahead of time for a low effort addition to your game day menu.

Ingredient Substitutions

Jalapenos - Want a more mild level of heat? Swap the jalapenos for red bell peppers or mild poblano peppers

Bacon - As much as I adore bacon, you can leave it out to make this a vegetarian appetizer

Cheese - Don't have pepper jack?  You can sub in part-skim mozzarella, monterey jack cheese, colby jack cheese or even sharp cheddar cheese.

Time needed: 2 hours and 20 minutes

Let's make this jalapeno popper dip recipe!

  1. Cook the Bacon

    Dice up thick cut bacon and cook it over medium high heat in a nonstick skillet, stirring up the bacon bits occasionally so that they cook evenly. Once they're crispy, transfer them to a plate with paper towels to soak up the excess grease. Drain off some of the remaining grease left in the pan but keep about a tablespoon's worth sauteeing the onions.

  2. Prep the Ingredients

    Hot tip! Wear gloves when you're cutting the jalapeno. Otherwise it will transfer its spice to your fingers which can hurt if you touch your eyes.

  3. Saute the onion

    Add the onion to the pan with the leftover bacon grease and saute them enough that they're soft and fragrant. Two to three minutes should do the job.

  4. Mix it up and set it on LOW

    Add the the sauteed onions, minced jalapenos, diced green chilies, garlic powder, salt, paprika, cream cheese, pepper jack cheese, and sour cream to the bowl of a crock pot. I like to use this small 2.5 quart one for dips. Then mix everything together. Cover your pot and cook on the low temperature setting for 2 hours.

  5. Stir, Top & Serve

    After 2 hours of cooking, the dip should be nice and bubbly. Go ahead and stir it up.

  6. Top and Serve

What to Serve with Crock Pot Jalapeño Popper Dip

I'm a fan of serving this with tortilla chips, baguette slices, pita chips or corn chips.

You can also make this a low-carb option by serving it with sliced fresh veggies, like celery and cucumber.

Alternative Cooking Directions

Rather prepare this in the oven? In step 4 instead of putting the dip ingredients into the crock pot, mix it all up in a medium sized 10 inch baking dish. Then bake it uncovered at 350F in the oven for 25-30 minutes or until the cheese is melted and bubbly.

Ingredients

  • 6 slices bacon, diced
  • 1 medium white onion, diced
  • 3 jalapenos, seeded and minced
  • 1 7oz can diced mild green chiles
  • 1 teaspoon garlic powder
  • ¼ tsp salt
  • ½ tsp paprika
  • 8oz cream cheese cubed
  • 8oz pepper jack cheese, shredded
  • ½ cup sour cream
  • ¼ cup pickled jalapenos, diced
